The lady’s primary residences are in New York & Hamptons, so the chef will be between these home 80% of the time (& mostly NYC). The chef will work all holidays. The position is live out in that the chef must pay for his/her own residence in NYC. Hotel or staff housing will be offered in each other location. The chef should be expert in beautiful food and table presentation. While the lady expects the best of food quality and preparation, presentation is of equal importance. All meals are served on platters or are plated, at the table on or trays. As aesthetics are such an important factor in the happiness of this lady, fruit and flower arranging are another important component of this position. Chef must prepare hors d’oeuvres and snacks to be served throughout the day. The chef should be interested in the lady’s well being and be willing to research current ideas put forth by her or her staff on nutrition and diet, and modify meal plans based on these notions. All shopping is to be organic when possible. The lady has eclectic taste and does not require one category of cuisine, French, for example. The chef must be inventive and open to suggestion. The chef will be engaged mainly in preparing private meals for the lady, her daughter and their guests: there is not a great deal of formal entertaining. Generally, formal dining is limited to 14 guests. The chef will be responsible for organizing & maintaining cleanliness and order of kitchens in several locations and occasionally in temporary rental homes and chartered yachts. The chef needs to be calm and good-natured and be able to work in a culture driven by flexible, ever-changing schedules. He or she must speak perfect English. Must work well with others, including a wine curator and domestic staff. The chef may often serve the table when the lady is dining alone or in the case of small, casual dinner parties.
